Pat the beetroot dry with kitchen paper. Tip into a bowl and stir with the feta, spring onions, herbs, eggs and breadcrumbs. Put the beef mince, onion,Worcester sauce and egg yolk into a big mixing bowl with plenty of freshly ground black pepper and some salt. Coarsely grate in one of the beetroot and mix well with your hands (wear gloves to stop staining). Heat a frying pan over a medium heat or light the barbecue, and brush both sides of the patties with a little oil.
