  19. 2 tbsp Besan dry roasted
  20. 1 tbsp Grated khoya

Kolkata Chicken Chaap Recipe is essentially slow cooked chicken tangadi that is marinated overnight, for the chicken to take in all the flavours. It is then cooked in a rich & luscious onion, ginger-garlic. I wish I could have said this recipe is my Mother's given to her by her great-great-grandfather Wajid Ali Shah's master bawarchi. I wish I could have said I was born into this recipe.

Steps to make Chicken chaap:

  1. Marinated chicken with onion paste, ginger garlic paste, yogart,kaju paste,rose and kewra water,mitha atar, food colour, cumin powder, coriander powder,red chilli powder, Kashmiri chilli powder,salt,sugar for 3 hours.
  2. Heat a pan add oil and ghee add chopped onion fry till golden brown.now add marinated chicken pcs and fry for both sides in medium flame.
  3. Now add the masala for gravy mix well and cover it. Turn the flame in low.
  4. After 15 mins uncover it and stir well.
  5. Now add roasted besan and grated khoya and mix well.add 1 cup warm water and cover it
  6. After 20 mins chicken chaap is ready to eat. Have it with biriyani,nan,kulcha.
